Ingredients

For the salad:

  • 12 oz rotini pasta
  • 3 cups corn (fresh, grilled, frozen, or canned)
  • 1 red bell pepper, diced
  • 1 jalapeño, finely diced
  • 1/2 red onion, diced
  • 1 cup cotija cheese, crumbled
  • 1/4 cup chopped cilantro

For the dressing:

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • Juice of 2 limes
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

Cook the pasta according to package directions. Rinse with cold water and allow it to cool completely.

If you’re using fresh corn, grill it first for extra flavor. If not, don’t overthink it. Frozen corn works great too.

In a large bowl, combine the pasta, corn, bell pepper, jalapeño, red onion, cotija cheese, and cilantro.

Whisk together the dressing ingredients in a separate bowl.

Pour the dressing over the pasta mixture and toss until everything is evenly coated.

Refrigerate for at least an hour before serving.

Trust me on this part. It’s better cold.
